A little of this + a little of that = Lunch

What do you with with those pesky just a little bit left, leftover veggies from dinner?  With the price of food, you don't want to throw them away, but too often they get left in the back of the fridge, until they grow legs or turn into an interesting scientific experiment and then you chuck them out.   I have been known to keep a plastic container in the freezer and I'll add that tablespoon of corn or peppers or whatever that's left from dinner and throw it in there.   And then one day, I'll tip that whole container of veggies into a pot of homemade chicken stock, and LUNCH.   It has made for some interesting taste experiments, and usually been pretty darn good.    Just an idea.   The other day though...

I had a couple of potatoes left over from dinner the other night, not enough for a meal, also had some leftover mushrooms, as well as a corn/pepper/onion side, not enough for more than a taste.

But if you brown the potatoes in a little EVOO, add the mushrooms and the corn dish, stir it together, you get a respectable lunch.   And a healthy one.   Took me all of 5 minutes, and Voila!   Lunch.
