Caprese Bruschetta

You ever go in a grocery store and see an item for sale and get one of those AHA!!!! moments?  Yeah me neither.   Just kidding.
I was in a Winn Dixie and as is my habit was looking at the cheese and was debating on whether I really needed another goat cheese.  I have one in the fridge right now, cause having one of those around is a very handy item to have.  That along with a few other staples.    Then I spotted some 'Pearl Mozzarella'.   I HAD to pick it up and look at it.   I'd never seen anything like it, and somehow it made its way into my basket.   I had to take it home.   I already had some Ciabatta Rolls out, and was going to make some kind of dip to go with the bread because we were getting together with some friends, but then that Mozzarella whispered 'Bruschetta, Bruschetta', and I knew what to do with it.


I went home with the Pearl Mozzarella, and some Grape Tomatoes.   I then raided my newly planted Thai Basil, and nipped off the tops, well, I do want them to branch out a little and it doesn't hurt to top them.



  I chiffonaded the basil, added the cheese, the tomatoes, cut into eights, some olive oil, about 2 tablespoons and the same amount of balsamic vinegar, a finely minced clove of garlic (this was elephant garlic, you might want to add more than one), and a couple grinds of sea salt.  Put it all together and I had Magik. 
  
I drizzled some olive oil over the sliced Ciabatta Rolls and browned them under the broiler.  At least one side was nicely browned, the other side, got a little well done.  But I like crispy bread so I just kept the blacker pieces for me and took the rest with me to the gathering.   




And it was eaten.    I don't think this will be the last time I make this particular dish.   Easy, quick and delicious.  

Update:  There were other delicious dishes at this gathering, and I did take a couple of pictures with my phone, which means the quality of the pictures isn't all that great, but...   And for some reason when I sent them from my phone to my computer, they bounced around the airwaves for a week before I finally received them.  SHEESH!!!!!   But better late than never.   I did not get any pics of some of the other dishes though, hey, I was at a party, and it was not my job to take pics, just enjoy myself.    That being said, in my usual wordy fashion, there were some delicious pizzas baked on the grill outside, as well as this yummy Taco Salad, that were brought and shared.
