Cilantro and Lime Rice

I used to go to a fast food joint and fell in love with their rice, it had a hint of cilantro, a hit of lime and was so good on the burrito's.

So I decided to recreate it.   And it was good.   In fact it was so tasty, I ate it all by its lonesome.    Now I need to make some more cause I really want a burrito with some sliced grilled chicken, beans and the rice inside.    

I only made a little because I was playing with it, trying to get it 'just right' without wasting a lot of rice and stuff.   And  for this week I've been cooking just for me.   Which has meant I've been having fun in the kitchen.   I had a childhood favorite dish one night, Koldskål which is basically sour cream, sugar and buttermilk mixed together.  Yeah, I know, but this was a treat dinner in the summer.   And best of all I got to eat sugared cereal or even just plain cereal with it for dinner.

Cereal for dinner, it's a good thing.   But then again, I like leftover meat and potatoes for breakfast.  Well, who made the rules as to what you should eat when?  
Onto the rice.

1 cup cooked rice
1/2 tsp. Lime Juice
1 Tablespoon minced Cilantro
1/4 cup chopped raw sweet onion
1-2 tablespoons Herdez Verde Sauce

And that's it.   Mix together and eat.
