Omelets and a slight break from posting.

Taking a few days to visit with family, so have not been doing a great deal of cooking.  

I did make an awesome omelet the other day, filling it with some leftover veggies from the stir fry the night before. 
I'll share how I did that next week, cause I want to recreate it. 

It was that good and nicely filling without a great deal of heaviness to it. 

The filling was chopped up snow peas, red onion, red pepper and some diced tomatoes.   The only seasoning I used was some Badia seasoning called Sazon.  

So good...
