Chicken cauliflower and rice.

 I used to buy a prepared frozen entree which purported to be low calorie, but it tasted so good, I'd buy it for the taste.  It was discontinued it a long time ago, and I miss it.  

The other day I had some leftover chicken and cauliflower and a LIGHTBULB! went off.

I could recreate that dish.  So I did.
Chicken Cauliflower Rice

I love leftovers. They're so much fun to play with.

I had some chicken, some Roasted Cauliflower, and some Palak Paneer.   And some mushrooms as well.

I cooked up some fresh rice, and then had fun.

Recipe:  Chicken Cauliflower and Rice   Serves 1

1 cup Cooked Rice
1/2 cup cooked cubed leftover chicken
1/2 -1 cup leftover roasted cauliflower
1/2 cup leftover sauteed mushrooms
2-3 tablespoons Palak (the sauce from the Palak Paneer)
or
1/2 cup cooked spinach, chopped
1/2 ounce cubed Swiss Cheese


Heat the chicken, rice, cauliflower and mushrooms.  Mix together, gently,
then add the Palak sauce or the cooked chopped spinach.
Finish off by stirring in the Swiss Cheese just before serving.
Serve immediately.

I loved the flavor the Palak Sauce gave this dish, and in fact, I may have to do a repeat with the rest of the leftover chicken, tomorrow.
Although I'm out of cauliflower and mushrooms. 

Sometimes you just have to take one for the team.

I'm just sorry it took me this long to try to recreate the recipe.  But it won't be long until I try this again.
