Herbed Sun Dried Tomato Spread

I love it when I go to a store and spot a food item I've never seen before, on sale, cause it usually means I will buy it and try it.    And that's just what I did last week.

I spotted a jar of Sun Dried Tomatoes with Italian Herbs on sale and somehow it found its way into my cart.  Funny how that happens...    I love sun-dried tomatoes anyway, and thought that the addition of herbs would be a good thing.   And it was.   I wanted to use it in something right now, cause if left to myself, I think I could have eaten the entire jar, piece by piece.  

But I desisted.    I was heading out for my Friday night gathering with the ladies and was running short on time so I whipped this spread up.   And it was so good.   At least I liked it, so did they, judging from the fact they were noshing away on it.      

8 oz. Cream Cheese, use the Neufchatel here if you like.
1/4 cup Sun Dried Tomatoes with Italian Herbs, chopped up a little
2 sprigs thyme, (fresh thyme, right from my garden) chopped
2 sprigs fresh Oregano (again, fresh from my garden) chopped
1 small sprig Fresh Rosemary (same song), chopped
1/4 cup Greek Yoghurt
1 small clove garlic, minced
1 tsp. of the oil from the jar of tomatoes

Mix together and let sit for a bit for the flavours to mellow together.

 Serve with pita crackers or gluten free crackers or even some pretzels.    I know this cause I dipped a couple of pretzels in this and it was good.
