It was the third Community Potluck this past Monday, and while it wasn't well attended, there was some great food. We meet the second Monday of the month, bring food, eat too much, socialize and enjoy ourselves.
August is kind of a bridge month between summer holidays and school starting again, and a lot of people are taking advantage of a last minute vacation before the kiddo's head back to school. Which means we had a lighter than usual attendance, but that's OK, I got to visit with almost everyone.
Without further verbiage, here's the food that was brought.
Curried Chicken Salad, love the presentation.
Mixed Bean and Corn Salad
Mixed Potato and Chicken Casserole (There were purple potatoes in here, love those)
Ravioli, and of course I to have some, I do love my pasta.
This Thai inspired Pork Dish, and sorry can't remember what it's called. It was delicious though.
Red Beans, Rice and Sausage. One of my all time favorites.
Potato Salad, with lots of eggs on top.
There was also some Hummus and Pita Chips.
I had fun and reached into my Danish Roots and make two Danish Dishes,
Forloren Hare or Mock Rabbit, which is just a fancy name for meatloaf, before slicing.
We did have two offerings for Dessert.
and these, Hindbærsnitter or in English, Raspberry Bars. (I'll be sharing the recipe next week).

After slicing, most of it was eaten, but there were a couple of slices left that I could take home for my breakfast the next day. (I'll be sharing the recipe next week).
