I got the initial recipe from Andrea at Adventures In All Things Food, during a Cookie Carnival and even though we had to concentrate on cookies for that event, and not bars, I had to keep looking through her recipes, and bookmarking some and drooling over others and ...
While looking through her recipes I found the following;

Cause this recipe is one I've been looking for, for years and years and years and years. I remember one of my sisters' friends making it, and I loved it.
But, I haven't been able to find the 'right' recipe since.
Every time I see bar cookies offered when I go to various potlucks and events, I have to taste one, and while most of them are good, they're just not quite right.
I was getting discouraged. Actually I'd hit discouraged and had given up on ever having these again.
My waistline may never recover, sigh. Actually it will because I also made this for this for the Legion Cake Raffle I bake for every other week, and boy was it fun watching people buying chances on this.
Sue of Palatable Pastimes started Baking Bloggers and when I asked, nicely if I could join, they let me into the group and well, gee, I've been having fun ever since.
It just so happens that the Baking Blogger theme or challenge this month is Brownies and Bars.
Can I just say again, I had so much fun with this, way too much fun, and I might have gone into a slight sugar coma from sampling.

Had to keep sharing the pictures, and if you could only taste how good these were, sigh.
I flirted very briefly with making some brownies with black beans for this month, we winked at each other, raised an eyebrow or two, and then didn't follow through. Don't knock it, a friend makes a killer brownie with black beans, however while looking through some of my previously bookmarked recipes, this is the one that flew out at me. And I didn't even duck.
I did change it up, just a titch, cause I'm not that fond of cinnamon and chocolate together, they tend to have some issues with dominance and try to outdo each other in recipes. so...
I love mocha anyway, so I switched out the vanilla extract for some coffee extract. Chocolate and coffee do play together nicely.

Triangle Delight Bars

This is a fun retro recipe and it's even more fun watching adults go nuts over this as it's a blast from the past for many of them.
ingredients:
- Whole Graham Crackers, enough to cover the bottom of a jelly roll pan.
- 3 c. mini marshmallows (One package)
- 1 c. butter
- 1 1/2 c. brown sugar
- 1 tsp. cinnamon or
- 1 tsp. coffee extract
- 1 c. sliced almonds
- 1 1/2 c. unsweetened organic flake coconut
- 1 1/2 c. semi-sweet chocolate chips
instructions:
Preheat the oven to 350 degrees.
Cover a large jelly roll pan or a half sheet (15x11x1in.) cooking pan with parchment, letting the parchment paper go up the sides a little. Spray with some non stick cooking spray and then place the graham crackers in a
single layer on the bottom of the pan. Make sure you have sides to the pan as the sauce will creep, up the sides, over the edge... Cover with a layer of marshmallows.
In a small saucepan combine the butter, sugar and the cinnamon if using cinnamon. Cook over
medium heat stirring to dissolve the sugar, let cook for a couple of minutes. Take off the heat and stir
in the coffee extract. Pour the hot mixture over the marshmallows, reserving 1/3 of it. Top with
almonds, chocolate chips and 1 cup of coconut, layered or just mix the three together, although I did layer it, almonds first, then chocolate chips and finally the coconut. Drizzle with the final third of the toffee sauce, top with the final 1/2 cup of coconut.
Bake for 12-15 minutes until the top is golden brown. Allow the pan to
cool a little, lift the parchment paper out if desired, carefully or slide it out, with the cookie bars on it, and then slice into 3" squares, then into triangles. A pizza cutter
works well for this. These are gooey, sticky, and teeth cringingly sweet. But oh, are they good.
