I love breakfast on weekends especially when I make us one of our favorite breakfasts and in honor of it being Cinco de Mayo this week, I thought I'd share a few of my favorite breakfast.
In order of our personal favorites...
Actually, I should say our favorite breakfast is this.
Huevo's Rancheros Every time I make Chile Verde, I keep some of it for this.
We also love the following breakfast.
A lovely lady named Peggy gave me this recipe and I named it in her honor as well.
Peggy's Paparito's are a great breakfast but can also do double duty for lunch or dinner.
We do love a good burrito for breakfast and this one hits the spot more times than not. I just call them
Breakfast Burrito's.
Peggy used to make this for her husband Paul from time to time, and since I'm an onion lover, I tried it out one day.
I'm not too sure how many times I've had it since. Paul's Stacked Enchilada's are not for the faint of heart or should I say, don't make it if you don't like onions.
And did I mention this sauce, which I think could be used on any breakfast eggs with brilliance.
OK, so I tried it on an egg.
Salsa Taquera Roja goes great with some chips, but trust me, it also gets along very well with a fried egg.
Personally, I like a dippy egg as my friend Donna calls it, but if you want to try any of these recipe's, you can make your egg however you like it.
