Cinco de Mayo ideas

Happy Cinco de Mayo.

I know it's not a big holiday, but rather an excuse to make and eat Mexican inspired food.

Chile Rellenos I'll be making some Chile Rellenos for dinner tonight so I thought I would just do a quick post and show you some ideas if you were in the mood to make a mexican inspired meal tonight. 

Chile Verde with Tortillas







Chile Verde is always a popular menu item in our house.  Served with some hot tortilla's, nothing better.



Enchilada CasseroleIf you're into casseroles, this one is always a crowd pleaser in our house.  Enchilada Casserole.  Not only is it quick and easy to make, you can also make this ahead of time and freeze it, and then pull it out and bake it.

Acapulco Chicken









And one of my personal favourites.   Acapulco Chicken.   I don't think this is really authentic, but I don't care, I like it.
