Senior Lunches the past couple of weeks

I meant to post about our lunches earlier this week, but life got in the way and tripped me.
sigh...

OK, so it wasn't a literal trip, but more of a busy week.

I had to make and blog about my Secret Recipe Club recipe pick and I did get that done.  I made some totally yummy Horseradish Hummus this past week.  This will definitely be a repeated, often dish.
And then of course it was Cinco de Mayo this week, and we ended up having mexican inspired dishes almost the entire week.
We do like our Mexican food here.  I made Tacos one day, Chile Relleno's another day, Chicken Enchilada's on still another day and we joined friends at a local restaurant for Taco Monday,  I made Huevos Rancheros another day.

And of course I made some Mexican Fiesta Chicken aka, Chicken Fajita's for Senior lunch as well.  Along with rice and beans.   We had a lovely large turnout for that meal.

Last week I made some Hamburger Steak, Mac and Cheese, Green Beans and Cornbread for our Senior lunch.  Lisa also showed off her baking skill and made a wonderful Apple Cake for dessert.

We didn't have as big a crowd though, a lot of the snowbirds had headed home.

I guess we'll see them next year...









Next week, we're having Pork Roast, Mashed Potatoes, gravy and a vegetable.   And of course, dessert.

Boat Club is tomorrow and I'm still playing with some ideas for that.  We've not been able to attend the past couple of months, so I'm really looking forward to that.
