Cheesecake tarts

After I made the No-bake Cheesecake cups I had some leftover filling and no more chocolate cups, anywhere.

So after watching the leftover filling sitting in the fridge for the past few days, and not wanting to throw it away or eat anymore of it on graham crackers I got an AHA!!! moment and decided to make it into real baked mini cheesecakes.
Cheesecake Tarts

Well, kinda cheesecakes.
I whisked an egg into the leftover filling, cause gee, I already had the cream cheese, sweetened condensed milk in there and all it needed was an egg.

I had some tart shells in the freezer and decided that they could be pressed into use today.
In other words, they had no choice in the matter.

I also made a quickie graham crust for two other shells, but in retrospect, I had really only had enough filling for four tarts, not five.

I did bake them off for 40 minutes and they were just about perfect with a little of the leftover cherry pie filling on top.

Sometimes you just have to indulge yourself.

Pardon me, but I think I hear another cheesecake tart calling my name.
