I cheated, we had Chile Verde for dinner last night, we celebrated Cinco de Mayo a day early.
If you still haven't figured out what you're going to make for dinner tonight to celebrate, here are a few ideas.
How about some Chicken Quesadillas?
They're quick, easy to make and taste delicious.

I make these at least once a week.
One of my favorites is Acapulco Chicken or Chicken Acapulco, I call it by both names
There's always Cheese Enchilada's Tijuana Tilly style, another of my faves.
Last, but not least...
Enchilada Casserole, which is a family favorite.
Oh and before I forget, you will need a sauce to dip your tortilla chips into.
You could make some Salsa Taquera Rosa
or
Pico de Gallo
or
Chile de Arbol Salsa
Choices, choices, choices...
