Breakfast Spaghetti for Secret Recipe Club

 The Secret Recipe Club is a bunch of bloggers who get assigned someone else's blog in the group and are asked to make a recipe from that blog.  I got to join several months ago, and have had a lot of fun going through blogs and finding stuff to make.     We don't know who gets our blog, and at a set time we reveal the recipes that we choose to make that month from our assigned blog.   We all "REVEAL" the recipes we made at the same time, and then have fun going from one blog to another looking at the recipes.   Which works out really well for me.  I just look at the pictures posted, and then go happily from blog to blog, looking and drooling.  TMI?  Oh well, it's fun anyway.

This month I was assigned Sarah's blog, Sarah's Kitchen  and I had fun going from recipe to recipe, noting how many times she uses Jalapeno's in recipes.  We like a bit of spice in our meals here.   Really, we do.   But Sarah is also a Brit and I wanted to make something that reflected her heritage.  So many recipes to try and so little time, well not really, but....   I found a recipe for Toad in a Hole, but could not find any proper 'bangers' to bake with them, and then I found this recipe.  Breakfast Spaghetti.     So simple and it appealed to my sense of fun.

Well, think about it, spaghetti for breakfast?  Really?

Yup and it was so good.

 Since I was making bacon anyway last Sunday, I thought it would be perfect.
Breakfast Spaghetti

Cook spaghetti according to directions and for how many you are serving.   I used  the quarter trick to cook just enough for me.

What quarter trick you ask?  Well, it's so simple.  You measure a serving by how much uncooked spaghetti will fit on a quarter.   Just like this.


I probably should have used a nickle measure, cause I made too much.  My dog liked the leftovers though.

Breakfast Spaghetti

Add some spaghetti to your Sunday bacon and eggs for a fun, different breakfast.

INGREDIENTS:

  • 1 cup cooked spaghetti
  • 2 eggs, scrambled with 2 teaspoons milk or cream
  • 2 slices bacon, chopped roughly
  • salt and pepper to taste
  • 1 TBSP. butter + 1 tsp. butter

INSTRUCTIONS:

  1. Cook spaghetti, drain and add 1 tablespoon butter and set aside.  Cook bacon and set aside to keep warm. Whisk eggs and milk or cream together, add salt and pepper if you like, then scramble the eggs to your preference in 1 teaspoon of butter.   I like mine just past soft scrambled, but not a hard scramble.    Add the eggs and the bacon to the spaghetti and give it a toss and serve.

And there you have it, a fun and different way to eat breakfast.   I quite enjoyed it and will probably make it again.   I think though, I would like just a touch of cheese on it.   Maybe a little grated Monterey Jack, perchance?

Note:  I've made this a couple of times now.  And yes a sprinkle of freshly grated parmesan is nice, but really, it's not needed.

  1. A great twist on breakfast...love it! I never heard of the trick about measuring dry spaghetti with a coin. I need to do this since I'm always making too much. Great SRC choice!

    1. Thanks, of course I never have claimed to be normal anyway. Isn't a fun idea for breakfast, or a light meal at night. All I know is I've made it a couple of times now, it was worth repeating.

  3. This sounds weirdly wonderful, an Almost-Carbonara. Hmmm, add some cheese and I'm ready to try a bowlful.

    1. You're right, it is almost Carbonara, but I like it better. And I did add a little Parmesan to it. And I think garlic is going to be added the next time, just a teensy little bit.

    1. It was interesting, and good. I think it would be a fun thing for kids as well. Especially when you want them to try something new and all they will eat is noodles.

    1. You're welcome. I've found that the quarter or nickel works like a treat if you only need enough for one or two servings. Depends on your appetite of course. And the spaghetti for breakfast, really pretty good.

  7. I am glad to see someone else uses that quarter trick as a measure for the spaghetti, it works. My husband will just love this dish, he loves that combination of pasta and eggs. Hope you are having a great day.

    1. Isn't that a great hint? Ive been using it for years when I want to cook just enough for me. It really helps with portion control.
      I think this is a dish I will continue to make for myself on those days I want a little extra carbs.
