Cakes, Cakes and more...

I bake and donate a cake every other week to our local Legion for a Cake Raffle the proceeds from which go to help the community.  It's my little way of contributing and having fun at the same time.
Besides which, I love to bake, and cannot eat it all.

Here are some of my latest.
Lemon Chiffon with Candied Lemon
And that same month I made this one, a Coconut Chiffon cake with Princess Frosting
I also indulged myself and made a few Chocolate Cakes and decorated them...  this one with some 7 Minute Frosting and Ganache drizzle.

I had fun with these as well, gotta practice, practice, practice.   I decorated a bunch of cupcakes,

Also made some Tiramasu cupcakes for another gathering.  I think I'm a little addicted to Tiramisu.  And putting them into cupcake form, was a rather brilliant move on my part.
I tried my hand at making a Cherry Cheesecake bundt, but haven't shared the recipe for it yet.  I need to refine the recipe a little.  But it tasted good.
My latest cake and one I'm really rather chuffed about.
Hamburger Cake
This one.  Friday nights at the Legion are known as Hamburger Night and the past week I made this, and I'll share how to make it at a later date.

Coming up on September 1, I'm hosting a Virtual Tapas Time party with some fellow bloggers featuring recipes made from my latest cookbook, Nibbles and Bites.  It's a fun compilation of many of the appetizers and finger foods I've made and shared over the past few years.    The link to purchase the book is just below.

Nibbles and Bites - A Compilation of Appetizers, Canapes and Finger Foods.  Available both in book form and as an ebook.
My cookbook Hygge - Danish Food and Recipes would be a great gift for any foodies in your life. Available as a Kindle e book or in paperback. Autographed copies are also available at the Danish Windmill in Elk Horn, Iowa or on their website.

And she's still looking for the mythical fairy to help her clean the kitchen after a marathon cooking session. Currently working on a cookbook showcasing the recipes from her Danish heritage.
