Tapas for August 2018

It's raining outside right now, lightning and thunder have driven my dog out from my office, she's seeking shelter somewhere else.  But I'm happy cause I love rainstorms.
And I'm also happy because we had a great Tapas Night this weekend.   It's August and a lot of people are away so we had a light turnout, but it's all good.
Lots of great food and desserts.   But that's not surprising.  We have some incredible cooks in our area, who love to share.
For starters, a lovely spinach artichoke dip
 Some marinated Asparagus, which was very popular
We had a Pasta Salad, which not only looked pretty but also tasted wonderful. 
and there was this baked Onion Dish, made with Vidalia Onions
As well as some lovely shrimp, with a cocktail sauce as well as a soy ginger sauce
and this, a Tomato Aspic or as Harriett calls it Tomato Surprise.   This was a major hit.  It's been years since I had some and this one, was better than I remember them being.
I made some No Knead Rolls and set them out alongside some cold cuts.  These are so simple to make and whip up in no time at all. You can actually have these on the table in a couple of hours with little effort. 
And the plate was cleared in short order. 
I also put out some Chips and Salsa
And made some Vegetarian Potsticker's, the recipe for them is in my new cookbook Nibbles and Bites, page 133.  You can buy the book from me as well as from Amazon.   
I put out two kinds of pickled Herring, one bowl of plain or wine herring and a bowlful of Karrysild or Curried Herring, page 41 from my first cookbook, Hygge - Danish Food and Recipes.  They were both well received.  I also put a plate of my home made rye bread out as well., it's on page 26.  You have to eat herring on rye bread, you have to, it's a rule.

We also had a lot of desserts;
From Carrot cupcakes,

Some Watermelon,
Brownies
Blueberry mini muffins
Sweet Potato Pie
Peach Cobbler
At the back there a Turtle Pie.

Upper Left, Pineapple, and I put out some Brunekager (the recipe is in my cookbook Hygge- Danish Food and Recipes - page 190
I also put out some chocolate cupcakes with Peanut Butter and chocolate frosting.
So there you have it, another month and another Tapas.
